  • 150 g 1/2 cup plain Greek yogurt

  • 17 g 1.5 tbsp extra virgin olive oil

  • 15 g 1 tbsp fresh lemon juice

  • 1 g 1/4 tsp kosher salt

  • 0.2 g 1/8 tsp black pepper

  • Before We Start

    Uses: This can be a great addition to our roasted beat salad recipe or with kebabs. It is a versatile sauce with a neutral profile for when you just want a nice cool and creamy something with your dish.
    Alternatives to Yogurt: If you don’t have plain yogurt, you can replace it with crème fraîche or sour cream to achieve a similar result.
    Adding Herbs or Sweetness: This can be used as is or as a base for other sauces. For example, you can stir in minced herbs like dill, parsley, or mint—or a tiny drizzle of honey for a sweetness.
  • Juice the lemon

    Cut a lemon in half or into lemon slices. In a small bowl, squeeze out enough juice until you have enough for the recipe.

    Remove any seeds that may fall into the bowl and discard any extra juice. This should take bout 1/4 of the lemon.
  • Combine and mix

    To the same small bowl, add the yogurt, olive oil, salt, and pepper. Mix all the ingredients together well until the olive oil and is completely incorporated into the sauce.

    If not going to use right a way, cover and place in the fridge until you are ready to serve it and enjoy.
