A creamy French Dijon dressing made with mayonnaise, olive oil, lemon juice, garlic, and thyme—perfect for salads, veggies, or grain bowls.

Ingredients

  • 45 g 3 tbsp mayonnaise

  • 13 g 1 tbsp extra virgin olive oil

  • 6 g 1 tsp Dijon mustard

  • 10 g 2 tsp lemon juice

  • 1.5 g 1/2 garlic clove, finely grated

  • 0.5 g 1/4 tsp fresh chopped thyme

  • 1.2 g 1/4 tsp Kosher Salt

  • 0.2 g 1/8 tsp black pepper

  • Before We Start

    Mayonnaise: Use full-fat for best texture and richness; vegan mayo can work as well.
    Lemon Juice Alternatives: If you don’t have fresh lemons, swap it out for white wine vinegar.
    Fresh vs Dried Thyme: If you have fresh thyme, go for that, if you are substituting dried in, double the amount.
  • Grate the Garlic

    In a small bowl grate the garlic with a microplane.
  • Add the Acid

    Add the lemon juice (or vinegar). If you have time, you can let it set for about 10 minutes and that will reduce the bite from the garlic.
  • Make the Base

    Add the mayo, dijon, and olive oil to your bowl.
  • Chop the Thyme

    Pick the leaves from a few sprigs of thyme and finely chop them. Add the thyme in with the other ingredients.
  • Season & Whisk

    Add the salt and pepper (preferably freshly cracked). Whisk until smooth and emulsified. Taste and adjust acidity or salt levels if needed.
  • Serve or Store

    Use immediately or store in an airtight container in the fridge for up to 5 days.

What can I use this dressing on?

This is great on dark greens, roasted vegetables, grain bowls, and many salads. The one area I would avoid it is with sweet salads. Although, using it with pear and chicken in a salad…yeah that is a good combo.
